The DCS Compendium Chapter Three with the Balvenie 1993 comes along as the third chapter of a total of five. This whiskey is one of 25 single cask whiskeys from Balvenie in Speyside, Scotland, which make up the life's work of David C. Stewart. From the 1960s to well into the 2000s, the DCS Compendium features both the youngest and the oldest single malt Balvenie has ever released. The 23-year-old single malt Scotch whiskey belongs to the "middle-aged" bottlings, all of which are bottled at natural cask strength. Balvenie 1993 with 700 ml and 51.9% vol. is perfect for connoisseurs who like to adjust their whiskey to an individual drinking strength.
In addition to the natural cask strength, Balvenie's DCS Compendium dispenses with other aspects of production. Not only are no colorings used, but chill filtration, which is considered normal in many distilleries, is also omitted. When this whiskey was distilled in December 1993, no one could have guessed how the cask would develop. In the warehouses, the whiskey remained in American oak refill hogsheads until bottling in April 2017. There will only be 163 bottles of this strictly limited and exclusive bottling. Therefore, connoisseurs and collectors of Balvenie products should hurry if they want a bottle. With the younger bottles you have the chance of a single bottle. With the old whiskey bottles, which can be more than 50 years old, the rarities can only be found in the complete set with five bottles.
The DCS Compendiums have been published since 2015 and there should be Five Chapters, which will be completed in 2019. The cask 11621, in which the 1993 Balvenie Whiskey was stored, gave the whiskey its wonderful aroma and a really interesting taste. The nose is floral and fruity with a wonderful sweetness. Caramel, syrup and honey can be found on the palate and combine with vanilla and oak tones. The fruit lingers on into the finish, which is long and sweet.
